What properties make liquid lecithin so special?
The liquid lecithin from LECICO is very convincing due to its diverse qualities. Lecithin molecules are amphiphilic, this means that one end of the molecule is lipophilic (oil-friendly) while the other has hydrophilic (water-friendly) properties. The combination of these two opposite properties lends lecithin countless interesting active principles.
Lecithins have emulsifying properties. They help materials to mix together easily, avoid separation and achieve stable blends, such as cream-fillings, bread and cookie dough.
Liquid lecithins help to adjust the viscosity by reducing the friction between small solid particles dispersed in a liquid. In chocolate production lecithins reduce the friction between cocoa particles in the cocoa butter. They positively affect crystallization behavior by retarding crystallization and crystal growth in fatty products.
In addition, lecithin-oil mixtures often act as release agents in foods and are suitable for detaching sticky masses from pans and molds.

It can also be used as viscosity modifier, mixing facilitator, wetting agent, crystallization control agent, releasing agent, separation agent, anti-dust agent and stabilizer.
Besides the technological functions of lecithin, it has several health properties. Phospholipids are one of the essential substances in a living organism as it is one of the main building blocks of a cell membrane.
What is Lecico soya lecithin used for?
